Everybody loves Pesto. It’s a great addition to chicken pasta, spreading on sandwiches for an elevated taste and works well as a dip for crudités. It’s one of the most versatile spreads enjoyed by most but sadly, not for those who suffer from nut allergies. For these unfortunate few, there is a fantastic alternative called Zhoug which is now available at the bakery.
Zhoug is an absolutely moreish sauce made with a ton of freshly chopped coriander (cilantro), garlic, green chili, and olive oil. It has the most brilliant green colouring and the slightest dash of cardamom. The best part about it is that it goes well with everything – bread, dipping chips, cheese, or straight out the tub.
Unlike its cousin, Chermoula which contains paprika, cayenne and saffron, Zhoug packs a bit more of a spicier punch. It’s very accommodating and can be made to suit your palette by removing the chili seeds and chili flakes – but then, where’s the fun in that?
Here are 4 ways to enjoy Zhoug:
- Dips and Spreads: Zhoug is a zingy party favour and can be used as a delicious dip for breads and chips. Add a dollop onto mini-crostinis or bruschetta. It’s also traditionally served alongside hummus and falafel – ask for a sample on your next 2-for-1 Tuesday visit.
- Marinades: Zhoug can be used to marinade any kind of meat but particularly good with chicken and lamb. It goes surprisingly well with shellfish such as oysters and Mozambican prawns. It adds colour and tastes great.
- Pasta: How do you turn a bland spaghetti dish into something fanatastic? Just add Zhoug! Stir in a generous portion of this green wonder into a bowl of plain pasta for an elevated meal with a kick.
- Sandwiches: Who doesn’t love a sarmie. Zhoug goes particularly well with a nice strong cheese. Try it with swiss, gouda or a nice mature white cheddar – or even some Labneh. Add some fresh rocket and tomatoes to an open slice of bread and voila! Zhoug-good!
